Although it is possible to beat the game with only 1 wheel of stamina and only investing in hearts (that's what I did), investing in stamina will make world traversal much easier and less frustrating (playing with only 1 wheel does make you think about methods of recovering stamina as you climb, which can be considered problem solving if you want to). Also, enemies will continue to one shot you if you don't invest in hearts.
While the combat does lack depth at first, it does introduce some new mechanics not long after leaving the Great Plateau.
